Post 29: Using my Harvests

I am determined to use every ounce of my harvests this growing season.

This is one of my harvests from this week. Everything is really coming in fast.

This is how I used all of the produce that I got from my harvests this week.

First, I made SO much jam. And it is delicious.

I harvested some fingerling potatoes this morning.

They were volunteers in one of my pepper beds so I decided to pull them.

I used them for dinner tonight along with dill, a garlic scape, and one of my red onions.

I made egg salad for lunch using our duck eggs and chopped up pickles from last year’s cucumbers.

And I made a garlic scape pesto with my garlic scapes that I harvested last weekend. I was able to make 4 sandwich baggies worth and I froze them for later use.

I haven’t had a chance to use the cabbage yet but that’s next on my list!

By the way, tonight’s meal cost me $3.70 for the fish. Everything else, I grew right here.
